Pork Lo Mein

Quick noodle meal prep!
This is one of my favorite ways to use up a napa cabbage that I have left-over from another recipe. This is a quick, delicious and cheap recipe that works great for work lunches and freezes relatively well! It is delicious to serve with some chili oil!

Ingredients
3 fresh red chilis
½ tbsp Sichuan peppercorns
1 inch ginger, minced
250g ground pork
5 cloves garlic
1 tablespoon Shaoxing wine
¼ tbsp sugar
3 tbsp soybean paste
¼ tbsp white pepper
2 tbsp soy sauce
½ tbsp sesame oil
1/3 cup peanuts
3 green onions
1 package cooked yellow lo mein noodles
½ napa cabbage
Oil
Step 1: Cooking the pork
Add the chopped red chilis and Sichuan peppercorn to a pan with oil and cook on low heat while you prepare the other ingredients. Add the ginger and increase the heat, allowing the ginger to fry.
Add the pork and fry until cooked through. Add the garlic, Shaoxing wine and sugar and cook until fragrant. Add the soybean paste and cook until combined. Add the white pepper, soy sauce, sesame oil, peanuts and green onions.
Step 2: Cook the noodles
Cook the noodles according to package instructions.
Add to the other ingredients and mix to combine. Add the napa cabbage and cook until wilted.
